Contracted with local agricultural cooperation, buy fresh chestnuts before they come to the market, and all are hand-peeled and hand-crafted. No additives are used. This is a secret Kenmin show as a fine treat in Nakatsugawa Gifu Prefecture. Every day in September, we purchase chestnuts of more than 66.1 lbs (300 kg) to the agricultural cooperative chestnuts, wash them thoroughly with running water and steam at 100 degrees. Cut the steamed chestnut in half and remove the contents. Remove the demon skin and impurities from the chestnut fruit you have taken out. The chestnuts that have been removed from impurities are placed in a large pot with sugar syrup, and then cook for an hour and 30 minutes. The chestnut kinton is cooled well, and then squeezed with the shape of a chestnut. Our chestnut kintons are not machine produced, so you can enjoy the texture of chestnuts with lots of chestnuts. Once placed in your mouth, this is a rustic Japanese confectionery that spreads the flavor of the chestnut in the mouth. This chestnut kinton is the finest dried persimmon, Shinshu is packed in Iida's Ichida-Ichida-persimmon.
