唐代和宋代是我国酒酿造技术最辉煌的发展时期。酿酒行业在经过了数千年的实践之后,传统的酿造经验得到了升华,形成了传统的酿造理论,传统的酿酒工艺流程,技术措施及主要的工艺设备至迟在宋代基本定型。唐代留传下来完整的酿酒技术文献资料较少,但散见于其它史籍中的零星资料则极为丰富。宋代的酿酒技术文献资料则不仅数量多,而且内容丰富,具有较高的理论水平。本书系宋兆麟老师搜集整理的民间文献契丹文汉文对照版《酒经》的影印整理出版,即是一部反映宋代酿酒技术的文献资料。全书38册,每册10页,封面为线绘酿酒工艺图,书汉字书名“酒经”。内文为汉文契丹文对照竖排书写。第一册书前有文记载:“熙宁三年(1070年)命军事理参军王韶耗米二十九万斛造酒三赠与契丹过之七百斗,酒经书一部。耶律洪基为表敬意回赠坐骑三百匹,次年命耶律乙辛主此务”,此文点名了此部酒经的目的。而此时期正是宋辽间关系较为友好时期,耶律洪基迷于酒色,与其父亲辽兴宗耶律宗真非常重视汉文化,多作诗赋。此民间文献的记载正是那一时期双方交往的见证,对于研究宋辽关系史具有一定的参考价。同时,书中对酿酒技艺的图像和文字记载更是研究辽代时酿酒工艺技术的优选史料,对于酿酒史具有极其重要的价。本书可供历史学、北方民族历史和地方文化史、酿酒史等相关学科研究和传播机构的专家学者查阅使用,也是相关学科研究机构和文博机构资料室、图书馆重要收藏文献。
