药膳食疗在中华民族数千年文明史的文化背景下不断发展，渐进而成，不仅具有悠久的历史而且内容丰富，是一门独特的、既古老而又新兴的临床实用学科。根据有关史实资料记载，药膳的源流可分成以下五个阶段。
（一）蒙昧时期（远古）
《孟子·告子上》说“食色，性也”，是说人类的本能。而“民以食为天”是一句古语，则指人类为了生存、繁衍后代，就必须填饱肚子以维持身体新陈代谢的需要。原始人重要的一件事就是觅食。当时的食物完全依赖于大自然赐予。吃的食物种类很多，不可避免地会因误食不合适的食物而引起不良反应。《韩非子·五蠹》说：“上古之世……民食果蓏蚌蛤，腥臊恶臭而伤害腹胃，民多疾病。”《淮南子·修务训》也说：“古者民茹草饮水，采树木之实，食赢蚌之肉，时多疾病毒伤之害……”说明了远古时期的先民，确实曾受到不当饮食所致疾病的折磨和困扰。
经过长期的生活实践，人们逐渐认识到哪些食物有益可以进食，哪些食物有害而不宜食用。《淮南子·修务训》说“神农……尝百草之滋味，水泉之甘苦，令民知所辟就，当此之时，一日而遇七十毒”，生动地说明了先民在寻找食物过程中，避开有毒的食物而摄取无毒食物的情况。后来，原始人从利用自然野火到人工制造火（燧人钻木取火），“火上燔肉，石上燔谷”，可获得更丰富的营养，使食品的加工更符合卫生要求，提高了人体素质和增强了抗病能力，对人类生存具有积极的保健意义。
以上人们对食物的选择和加工及保证身体健康的一些措施，都是生活中不自觉的行动，根本没有食疗药膳的概念，所以称为蒙昧时期。尽管处于蒙昧状态，却是艰难而漫长的一步，是人类发展史上重要的一步。
